Every result is published with its product definition, wage weighting, price median and working-time formula. Sampling limits for a national median are stated separately.

Standard product

The target definition is a standard portion equivalent to 150 grams of uncooked meat. When older records omit weight, the gap is stated in the scope note.

Annual wage

If the wage changed during a year, each period is weighted by the number of months it remained in force. 2022 and 2023 are not represented by a single January value.

Pilot median

Dated price points are ordered and the median is calculated. Price bands in news reports are converted to their midpoint; ceiling tariffs are not treated as sale prices.

Working time

Hourly net pay is derived using 225 hours per month. Dividing one portion’s price by that hourly pay gives the required working minutes.

WHAT IS THIS SERIES NOT?

Not yet a national price index.

  • The distribution of cities and restaurant segments is not equal across years.
  • Some older menus omit portion weight and service scope.
  • Chamber tariffs show maximum prices, not necessarily realised sale prices.
  • The 2026 value was compiled on 24 August 2026, before the year was complete.
SOURCE RESILIENCE

The primary link always preserves the exact evidence document. When a publisher provides a stable archive or decision index, a second access route is stored as well. A link that fails an automated check is not classified as lost until it is reviewed in a user browser and against the publisher’s official index.

INDEPENDENCE PRINCIPLE

Sponsors cannot influence the methodology, data selection or conclusions. Any commercial support is disclosed clearly and separately from the dataset.
